No Carb - No Crust - Comfort Food Quiche



  • 1 tablespoon cooking Oil (for sauteing the onions)
  • 1 onion chopped
  • 1 10-ox package frozen spinach, thawed, drained
  • 3 - cups shredded Muenster Cheese
  • 1/2 - 1 cup Romano Shredded Cheese (for topping only, do not mix)
  • 1 cup chopped ham
  • 5 beaten eggs
  • 1/4 cup green onions (topping only)
  • garlic salt and pepper to taste

Preheat oven to 350 degrees. Lightly oil your baking dish, 9-inch, and put into oven to get hot, I prefer stoneware for this, I love the crusty texture it gives but you can still get good results with a regular baking dish. This pre-heating the oil is a technique that gives a wonderful crusty texture similar to a normal crust.

Heat oil in large skillet on stove top. Add onions and cook until tender, stirring often. Add the spinach and cook until moisture has evaporated. Add the chopped ham last. Stir all together until well mixed. Do not keep cooking after adding the ham.

While all that is going on, crack your eggs into a large bowl and whip them up with hand whisk. Add garlic salt and pepper. Add cheese. Mix well.

Add spinach/ham mixture to this. Blend quickly. Take out HOT pan. (don't forget to grab your oven mitts please!!!!) Pour mixture into pan.

Sprinkly Parmesan/Romano cheese onthe top and the chopped green onions. This gives another layer of texture and flavor to the dish.

Bake at 350 degrees, in preheated oven for about 30 minutes.

**For something on the go, put mixture in muffin tins

I have to tell you.. this is one of my favorite recipes when I'm trying to shed a few pounds. You will not miss the crust and it feels indulgent, very much like a comfort food. Very filling.. and oh so delicious!!!
